Blueberry Sour Cream Cake

The Deputy Exams Officer comes into MrsM's office
He is anxious.

"I think we have to face up to the fact
that things are hotting up.
We are working to a very tight timetable
and I am not convinced
that we can make the deadline."

MrsM tries to be reassuring

"Trust me...I have a cunning plan...
I started with Stage 1 nutritious cake
and then it was Stage 2 carrot cake
and I don't think he noticed the icing.
Now we are at Stage 3..."

The Deputy Exams Officer looks puzzled

"What is a Stage 3 cake?"

MrsM points to the cake on the filing cabinet

"Blueberry Sour Cream Cake.
A cake shaped cake
and a proper cake plate.
But it has blueberries
which contain high levels of
manganese
vitamin B6
vitamin C
vitamin K
pterostilbene
anthocyanins
proanthocyanidins
resveratrol and flavonols.
So The Exams Officer will think it is a health food."

The Deputy Exams Officer relaxes...
he knows that the finishing line is in sight.

  2. What is your end game plan? Krispy Kreme doughnuts? Here's hoping.

  3. A woman after my own heart... although I am stuggling to find the health benefits in my latest offering, but I believe chocolate is good for seratonin levels.

  5. I need to have a word about this cake business. Yours look, and I have no doubt TASTE stunning.

I bought a cake ring - it really didn't work. IF you have the time (HA HA) one day, please send me the recipe for this gorgeous confection with cooking times etc - AND some info about a suitable cake tin.

  7. Sounds even healthier than Danish Marmite.

  8. the same cake tin works very well for coffee cake - MrsM bought some free range nuts in Florence which could usefully adorn such a cake. Part of my 2011 NYRs is to learn how to bake a coffee cake ...

There are a few things I should perhaps do first though.

  9. I don't think you're fooling anyone there.

  10. perhaps I should start small with cup-cakes and work my way up from their via maltloaf etc before attempt the assault on the coffee cake ?? Have to make sure that I have my nuts sorted into size order first of course.

Not OCD or anything but I believe in doing a job properly.

  11. Please box it up and have it sent over forthwith. Healthy blueberries would be ideal for my little ones.

Oh, who am I trying to kid. Licking the mixing spoon would do it for me today.
