Stage 2 : Carrot Cake

This carrot cake is made with
the best free range carrots
that money can buy.
I will not compromise
quality for principles.

Not even for the Examinations Officer.

I looked at it and I thought
"That is just
grated carrot
glued together with
sugar and flour."


And I am ashamed to say
that I made MrM try it.

He says it tastes good.

I don't make carrot cake very often.
My preferred version is quite rich.
Can anyone recommend a good recipe?

  3. Wow, I get to share a great carrot cake/bread with you all. I'm honored.
    Every Christmas I make 2 dozen of these, 4 dozen if I use mini loaf pans. A woman from the local army base picks them up and adds them to a bunch of other stuff and the USO sends them to our soldiers in Afghanistan or Iraq.
    my shift key isn't working so from here on out everything will be in lower case.
    you'll have to translate the measurements, i don't do metric.

    carrot nut bread
    350 degree oven
    3 eggs
    1-1/2 cup sugar
    1 cup vegetable oil
    2-1/4 cup whole wheat flour
    1-1/4 teaspoon baking soda
    1-1/2 teaspoon cinnamon
    1-1/2 teaspoon nutmeg
    3/4 teaspoon salt
    2-1/4 cup finely grated raw carrots
    1-1/2 cup chopped walnuts
    1-1/4 cup raisins...i put them in for cake, leave them out for bread...i'm not crazy about dried grapes

    beat eggs well then add sugar and oil. beat until light and fluffy
    mix flour, baking soda, cinnamon, nutmeg and salt together in a different bowl then add to egg mixture and stir until moistened. stir in remaining ingredients-the carrots, walnuts and rasins
    turn in to greased 9x5x3 loaf pan or mini loaf pans and bake in a preheated oven for about 1- 1/4 hours.
    cool for 10 minutes, then remove from pan and cool completely
    for a cake i use an icing made from cream cheese, honey and a few teaspoons of table cream
    for loaves i sift a bit of powdered sugar and cinnamon
    then i thank the lord for my food processor
    i once used this recipe,
    quadrupled, to make a 30 inch by 20 inch birthday cake and the entire cake was eaten by 16 people. no complaints there.

  6. Husband - yes you read that right makes 'Caroline's Carrot Cake' from Delia's book of Cakes. It is divine, moist, not too sweet and an alternative topping to cream cheese ensures it isn't over rich either.

    He takes a couple in to work on his birthday - there is never a crumb left!

  9. Wurghhh. I'm afraid I have never met a carrot cake that I liked. I suppose I might hate celery cake more if someone made that, but it would be a close run thing. And it's odd because I eat carrots by the bagful. In another life I might have been a rabbit.

  10. I have the recipe from the National Trust tea rooms at Gawthorpe Hall Lancashire. It has walnuts in it, and it has cream cheese and vanilla icing, and doesn't have that overwhelming spice flavour that some carrot cakes do. Nutmeg? Cinnamon? I can never christen it but I don't like it. Let me know if you would like it. Its in my recipe book, not my computer. I made one for a group meeting(Emb Guild or something) and someone was talking and eating and made an involuntary mmmm noise and without flinching continued with matters arising.
